Wonder Cake

Dry ingredients:
1 C cake flour
3 T cocoa
1 t baking soda
1 C sugar
1/2 t salt

Wet ingredients:
5 T cooking oil
1 T vinegar
1 t vanilla
1 C cold water

Combine the dry ingredients in a mixing bowl. Fold in the wet ingredients. Pour the batter into a lightly greased and floured cake pan. Bake at 350 for about 30 minutes.

This chocolate cake contains no eggs, no dairy, and no chocolate, whence the name. A relative of the the dark part of Black Bottom Cupcakes, it is a guilt-free, low-calorie, quick and easy dessert. An acquired taste, but I always liked it as a kid.
