Black Bottom Cupcakes

1 1/2 C flour
1 C sugar
1/4 C cocoa
1 t baking soda
1/2 t salt
1 C water
1/3 C cooking oil
1 T vinegar
1 t vanilla

8 oz cream cheese
1 unbeaten egg
1/3 C sugar
1/8 t salt
a squirt of lemon juice
8 oz chocolate chips

Preheat the oven to 350. Mix the dry cake ingredients. Add the water, oil and vinegar, and beat well.

In a separate mixing bowl, combine the first five ingredients for the filling. Stir in the chocolate chips.

Fill cupcake liners 1/3 full with the cake mixture. Top each with a heaping teaspoon of the filling. Bake in a muffin pan for 30 - 35 minutes.
