

- Cake
- 1 1/2 C flour
- 1 C sugar
- 1/4 C cocoa
- 1 t baking soda
- 1/2 t salt
- 1 C water
- 1/3 C cooking oil
- 1 T vinegar
- 1 t vanilla
- Filling
- 8 oz cream cheese
- 1 unbeaten egg
- 1/3 C sugar
- 1/8 t salt
- a squirt of lemon juice
- 8 oz chocolate chips
- Preheat the oven to 350°. Mix the dry cake ingredients. Add the water, oil and vinegar, and beat well.
- In a separate mixing bowl, combine the first five ingredients for the filling. Stir in the chocolate chips.
- Fill cupcake liners 1/3 full with the cake mixture. Top each with a heaping teaspoon of the filling. Bake in a muffin pan for 30 - 35 minutes.
