Lemon Bars

2 C flour
1/2 C powdered sugar
1 C margarine
2 C sugar
4 eggs
1 T flour
1 t baking powder
Juice and grated rind of 1 lemon

Preheat the oven to 350. Mix the flour, powdered sugar and margarine well. Press onto a cookie sheet with raised edges. Bake for 15 to 18 minutes.

While baking, combine the remaining ingredients. Pour this mixture over the baked crust, and then bake another 15 to 18 minutes, or until slightly brown. Cool before cutting.

(Note: Don't whip the eggs, which incorporates too much air and results in more batter than will stay on the cookie sheet.)
